Chop Suey -- Carrie's

Cook 1 lb lean pork & 1
lb lean veal -- Then dice 
small & brown well in skillet.
Add to the browned celery
& onions which have been
browned & steamed well. 
Add 2 can la choy sprouts (drained)
& 1 small can mushrooms
Mushrooms can be browned first
too before adding.

Mix 2 tabl. cornstarch &
water & add to 2 tabl
La Choy Soy sauce

Simmer slow (2) hours with
some of the meat broth.
        Serve on
La Choy Noodles - warm

Supper or Luncheon

Welsh Rare-bit

Butter size egg - melt
mustard - 1 t.
paprica until red mixture
salt - 1 t.
with or 
without}1/2 can Campbells tom. soup
1 tb cornstarch mixed water
1 lb grated cheese
stir as you mix.

Rare-bit

1 pt milk 4 or 5 crackers
crumble & let come to boil
mince cheese, let melt, then
stir in egg previously beaten
and let thicken, don't cook

Tarapin

Scald - wash. Cook well
after skinning & heads off.
open & clean. Put little
water in pan with 1 tbls vinegar
salt & pepper
                  
                    1 egg to each - hard boil & mash
dr                  lots cream into egg  
  ess        }    red pepper & salt (lots)
       ing         mustard

Stir into tarapin & don't cook
much, just enough to thicken.

Muskrat can be made same.


My notes:
Again, I typed this as it is written.  I love that Grandmother said to use butter, the size of an egg.  

I am not sure, but I think Carrie is Ms. Faye's (Collins) mother.  I think I should add her to the blog. Several recipes say Carrie's.  The only Carrie I remember is Miss Carrie but I could be wrong (anyone, please correct).  

Typing the way things are written are difficult when it came to the areas with a "}" in it.  Hopefully, you all will understand what this means.  Also, please remember to share this with your children. I really want the recipes to be passed from generation to generation.
